Greek cooking is more varied than the tourist often realises, spicer towards the north where there have been Eastern influences, and more 'Mediterranean' in the south. There are strong non-meat traditions too: the Greek orthodox eat no meat, eggs or dairy products during the 40 days of Lent, for example.
Several breads, cakes and biscuits traditionally prepared for religious festivals are included in this book, as is a selection of mezedes, the snacks found in tavernas throughout Greece that make excelent buffet and picnic food. A number of grain dishes make use of rice, barley, wheat berries and bulgar wheat, while some of the salads are meals in themselves.
Greek cooking is a rich source of inspiration for the animal-free cook, whether animal products are being avoided for health reasons or on vegan principles.
